Sloppy Joe Lettuce Wraps


This recipe blew me away.  I absolutely love the combination! 

The sloppy joe recipe is adapted from Organic Pasture's Super Savory Sloppy Joe Burgers
 My version of the recipe is changed a bit to add in more nutrition.  I like to double ground beef recipes because they are so easy to warm up later for a stress free lunch or dinner. 


The Meat

2 Lbs Ground Beef
Roughly 4 T Butter or Coconut oil for sauteing
2 medium Onions, chopped
6 Garlic Cloves, chopped
4 t Ground Cumin
4 t Smoke Paprika (I used regular and it worked just fine)
1/2 t Cayenne Pepper 
1/2 C Tomato paste
2-3 C Stock, homemade is best
4 T Apple Cider Vinegar
2 T Honey

In a large saute pan, saute onion and garlic in fat until aromatic (roughly 5 minutes).   Next, add ground beef and seasonings.   Once beef is browned add the remaining ingredients and simmer on medium-high to high until broth is reduced and the meat is nice and saucy.

Let meat mix cool slightly so you don't burn your mouth.  Serve on a large leaf of lettuce, this makes a great wrap! Just be careful, it can ripe easily.  

Inside the wrap top with Summer Meat Sauce.  Mmmmm! Great summer dinner, you will be happy you made so much of it!
