The other day I came across this article while I was browsing the net, it is called Why Skim Milk Isn't Necessarily Any Better, I found this article from foxnews.com very uplifting (this is what I've been trying to say!). It is about time we open our eyes. It has be over 70 years that our nation has been living according to bad 'science.'
The author of this article makes several good points. Why do we think we are better than God/Mother Nature? We take the fat out of milk and the skin of the chicken merely because some one told us to skip the extra calories. We use milk and butter substitutes, we homogenize milk so it looks more unified and appealing, we also extensively heat milk so it can go 9 months without refrigeration and we wonder why we have so many health problems. Dr. Weston A. Price said it perfectly--
"life in its fullest is Mother Nature obeyed"
The article brings attention to the fact that synthetic vitamins are added to the skim milk because they are lost when the fat is removed. This is very much true. Most vitamins found in milk are fat-soluble meaning they reside in the fat. Here is a little secret, vitamins fortified into milk is not going to do anything for you, no good anyway. Vitamins that are fat-soluble such as A, D, E, and K2 can be added all you want but they will not be used in the body because a) they are most likely not in the absorbable forms, your body can't use fake, and b) they are fat-soluble, they can not be utilized in the body with out the fat. Same goes for calcium, yes if you compare labels you will find that there is more calcium in skim milk, but none of it will be absorbed into your bones or teeth - not without the absorbable fat-soluble vitamins- instead it will find itself elsewhere, for example, in your arteries (that would be calcifying or clogging your arteries- heart disease, stroke, etc.)
Elena Ferritti, the author, also points out the skim milks and low fat milks contain oxidized cholesterol. The heavy processing of milk causes cholesterol to oxidize, this type of cholesterol actually does cause harm in the body (not the others). Oxidized cholesterol acts as a free radical in the body, which are unstable and need to pair with an electron to neutralize, so it ravages around the body in search of one, creating more oxidized cholesterol and major damage in the process.
Tidbit: At the turn of the 20th century farmers either sold or drank their whole milk and cream and gave the skim milk to the animals. Skim milk that was sold was always labeled - NOT FOR HUMAN CONSUMPTION.
She also wonderfully states, "Restricting calories, we now know, leads to temporary weight loss as the metabolism adjusts to weight-loss by slowing down. Fat isn’t making us fat."
Starving yourself of nutrients will get you would a few pounds lighter, but then your body slows itself down to regulate the nutrients you have in storage, the next time you sneak a bite, or go into a full on hunger binge because you are deprived of nutrients you will store all of that as fat because your body thinks you are in famine and will store everything it can to keep you alive longer. So restricting your calories may work but you will have to be dedicated and deprived for the rest of your life in order for it to.
Also without the fat in the milk, the sugar will cause your body to secret insulin to store the sugars because to much sugar in the blood is dangerous, when insulin is secreted so is glycogen (which is secreted from you muscle tissue and the liver) to settle the amount of insulin in the blood. This causes an up and down roller coaster leading to mood swings, cravings and hunger binges. Since their is no fat in the milk to balance the sugar, this will happen every time you consume skim milk, it will lead to overeating of other foods and cause you to gain weight where whole milk would have fully satisfied you without making your body produce insulin or bring on cravings and hunger.
Tidbit: Small farmers give skimmed milk to their pigs so they are more hunger and they will eat more. Then the pigs are ready for slaughter sooner. In other words, farmers use skim milk to fatten their pigs.

Now why didn't that get headline news?
Maybe it is time we reconsider what our public health officials tell us about what to eat and what not to eat...?
- Saturated fats found in milk such as butyric acid are short chain fatty acids which are easily digested, they are absorbed from the small intestines to the liver to be converted into quick energy and not stored as fat, like the polyunsaturates our officials prize as the only healthy fats.
- Saturated fats also slow down absorption of carbohydrates (which are sugar), preventing a spike in insulin levels, which is a very good thing! That prevents insulin resistance-diabetes and obesity.Without the fat, we feel deprived and still hungry, the insulin further drives our mood swings and cravings and will binge on other foods.

A Swedish study of 19,000 over 9 years found that women who had one serving of whole milk or cheese a day put on less weight than women who ate the same foods less often.
